Description

Of all the coffee producing countries, Ethiopia is perhaps the most famous and compelling. The fascination with Ethiopian coffee comes not only from the unusual, astonishing coffee it produces, but perhaps, also from the mystery that shrouds so much of it. The explosively floral and fruity coffees from Ethiopia have opened many a coffee lover’s eyes to the amazing diversity of flavor that coffee can have. Ethiopia is considered by many to be the birthplace of coffee. Harvesting coffee cherries from the wild Arabica Ethiopian heirloom coffee plants for export first began around the 16th century. Today variations of these plants are grown in many countries around the world. But even today, centuries later, it is still very difficult to find better tasting coffees than the Ethiopian heirloom coffees. These Ethiopian coffees are hand-picked and then milled and processed in 2 very distinctively different ways. 1) The original centuries old practice is Natural Processing. This consists of picking the ripe coffee cherries and letting them dry naturally in the sunshine on raised beds with the coffee seeds (beans) still inside the cherry. Once the cherries have dried they are run through the mill which separates the coffee seeds out of the parchment. This method creates a very fruity and floral cup with usually a much softer milder acidity. 2) The newer Washed Processing consists of picking ripe cherries and then running them through the mill and pulping the coffee seeds out of the coffee cherries. They go then to the wash tanks where the remaining cherry mucilage is washed off the coffee seeds. The seeds are then placed on the drying beds and sun dried to about 11% moisture. This washed method results in cup that is much brighter and cleaner tasting than a natural processed coffee. This brighter cleaner taste comes from a higher acidity in the beans. So in review – the natural process produces more berry/fruity notes – and the washed process produces a brighter cleaner cup.

Plenty of other roasting experts have added their erudite descriptions of this bean, its flavor profiles, etc... Just a some notes/comments on the roasting process, based on my DIY heat gun roaster experience: 1) Roast at a lower temperature. These beans are small, and can burn easily (just ask my first batch). 2) Because of #1, my typical roast times of 10-12 minutes are now 16-18 minutes. 3) The skins do not come as completely off as other beans. I roast my own beans and have tried several beans from various sources. I roast on a small scale, brewing an average of 50 grams per day for me and my husband. So I roast half a pound every three days or so. You can taste the dry process flavors of these beans. The fragrance and taste are our favorite so far. If you do a light roast (13:30 minutes in the roaster), the flavor is great but includes the earthy, gritty aspect of light roasts. I've moved to a medium roast (14:40 minutes in the roaster) and it makes the PERFECT cup of coffee if you use a 16:1 ratio with your water. Buy these! ... show more

Love this Coffee, just a home roaster that loves coffee. I only have been roasting my own coffee beans for a few months now. This is now my go to for everyday coffee, the hint of blueberry is awesome! I roast until I get first crack then I go for 15-20% development after first crack. That is usually 1:30 - 2:00 more mins. I gave some to a friend I work with, he drinks coffee with cream and sugar daily, I asked him to try it without his cream and sugar. He was was hesitant but he tried it. Boom! As far as Ethiopian coffee goes, it seems Yirgacheffe/Sidamo is what I see everywhere, but IMO Harrar is the best of the best. If you're reading this while looking up green coffee to roast yourself, you probably already know Ethiopia is the birthplace of coffee. It's embedded in the culture. I've been to Kenya, and looked for green beans, and Kenyans I was with could only find me instant Nescafe at the little town markets. Hardly anyone I ran into drank brewed coffee. I was shocked! All of Kenya's best coffee is exported. In Ethiopia, they export their second best. The best of the best they keep for themselves. I bought a bag of green Harrar at a little corner grocery store, roasted it when I got home to the US, and fell in love. Then I tried roasting Yirgacheffe and other Ethiopian green beans, and nothing I found compared to Harrar. A fellow coffee aficionado that I gave some to confirmed, this is one of the best coffees he's ever tasted. Harrar is known to have smallish, often irregularly sized beans, unlike other graded coffee beans. Buy from Smokin Beans. They're serious about their beans, and not just a markup retailer looking for a profit on turnaround. (No, I have no affiliation with the company.) I've gotten green Harrar from a number of Amazon and eBay sellers, and this is the best I have found anywhere. I've tried a few cheaper options (only a little bit cheaper by the way), but the beans were junk, and I was stuck enduring 5 pounds of mediocre coffee. These beans are a relatively consistent size and shape for Harrar. They're fresh and packaged well, and the price is very nice for such high quality coffee. I think this is the best coffee I'll find, short of flying back to Ethiopia and going to that little corner store. I started with Smokin Beans with a 5 pound bag. Most recent purchase was the 12.5 pound bag. That'll last me a while, and when it's done, I'll gladly click "reorder." ... show more
