With the price of commercially available vanilla "extract" almost out of reach, I make my own vanilla flavoring - without added sugar or water - using inexpensive vodka and these vanilla beans. I pour off an ounce of vodka, slit the pods with a sharp knife and add them to the vodka. I wrap the vodka bottle (as vanilla is sensitive to light) and six weeks later have really good vanilla flavoring.

These vanilla beans are excellent. I made vanilla extract with them and to my delight, this extract is exceptionally rich and fragrant. Plump and aromatic, these beans are the real deal! I used most of them for making extract, and a few for desserts and vanilla sugar. They were fresh and plump and worked great! It has taken longer to get the flavor I wanted from my extract, than it does with the Grade B beans, but it is coming along well and has a little different flavor. It seems more silky and elegant but not as deep in vanilla flavor at this point, and I love having both on hand.
