I bought the Valrhona blond chocolate in hopes of making a candy bar similar to the Hershey Gold bars that used to be around. They were described as a "caramelized creme" with pretzels and peanuts. They were my friend's favortie candy bar, so for Christmas, I thouht I'd try to make them for her. Before ordering, I asked what the blond chocolate tasted like and a few people said it just tasted like regular white chocolate. I guess everyone's taste buds are different because it definitely does not taste like regular white chocolate to me. It's slightly salty (which works perfectly for the bars I made) and had notes of caramel for sure. I had also ordered caramel flavored chips to melt into the blond and give it more caramel flavor so the bars wouldn't be too salty from the peanuts and pretzels. I am 100% happy with this product and will definitely be ordering again. Next time, either a second bag or bigger bag because I only got about 5 bars out of the small bag, I believe it was 13oz. First of all let me say that I have been ordering this company’s products for a couple months now and the quality of the chocolate is second to none. They make an effort to ethically source their Cacao because the industry can be extremely predatory in the developing countries that produce raw cacao. So you can trust zero slave labor was used in the production of these products. Secondly, I recently had an issue where, because of the heat, my chocolate was completely melted when it reached me. The fevers were fused into a single unrecognizable mass. Like a chocolate bar left on your car seat in the summer. By the time the package made it to me the ice was completely melted and useless. I contacted customer service through the app and their response was immediate and thorough. The first thing they did was send me a new order and overnighted it. Fed Ex made a mistake and it didn’t reach me because the overnight needed a signature and they must have come while I was away. This caused the delivery to take 4 days. In fact I never received it and Valrhona opened a dispute with Fed Ex. They then overnighted me another order and made sure to remove the signature requirement. I got it the next day and the ice pack still had chunks of frozen ice in it. They stayed in constant contact with me. Never made me feel like it was my fault and were absolutely amazing!!! Honestly I wish there were 5 more stars so I could rate them 10*!!! Overall I have to say their Customer Service is as high quality as their products… and that’s saying something!!! Now, if I could just get them to train my cable and cell phone company’s customer service departments… Well Done Valrhona and Thank you again ... show more

These are very delicious. I use them as rewards when my grandkids do the right thing without being asked! Out of all the things my youngest wanted for her Birthday she chose a “small bag of melting chocolate”. Now I feel like Grandma must have them on hand. Which would be OK if I could keep my hands out of them. I have not had a chance to make any thing out of them yet, I have been warned that “they are perfect the way that they are!” I always have to keep them hid and change the hiding place often! They arrived in great shape, but I did order in the winter. Will definitely order again just as soon as I figure out a new hiding spot! They melt in my mouth perfectly so I do plan on making some candy with them. But it will need to be a top secret operation… ... show more

I needed this chocolate to make a particular tart from a French recipe that specifically called for it (Valrhona Tarte Dulcey et Cafe). It's possibly the best thing I've ever made! The taste so lush and comforting, combining notes of white chocolate and French caramel, yet not overly sweet. I recently purchased the blonde dulce flavor and it’s probably one of the best chocolates I’ve ever tried. I love sweets but I love a balance of salty and sweet even more. And the flavor profile is just a perfect balance of salty and sweet. So amazing in cookies and I’m sure much more.

Great quality Chocolate. Its my favorite to work with! Chocolate was in perfect condition, no melted peices, not stuck together and no bloomed peices. Make sure you know what temperature you are working with to avoid any issues.
