Description

Summer 2024 has passed and this year's harvest is complete. The bees were treated to an abundance of yellow and white sweet clover in addition to a fair amount of alfalfa from the pastures and hay fields of the North Dakota prairie. The resulting honey is very light in color with a delicate sweetness and floral flavor. Not as robust or intense as many other honey varietals, TJO Bees is a great alternative for traditional sweetners. Each year we harvest our honey in mid August. After the honey is extracted, it naturally crystallizes within 2-3 months, sometimes sooner. In order to bottle the raw, crystallized honey and maintain all the natural goodness, we warm it slowly to 96 degrees until it reaches a semi-crystallized state which can be bottled into jars. Nothing more. Nothing less. Our honey is neither filtered or strained so it maintains all the beneficial pollen and microscopic enzymes. To liquify the honey, place the jar in a warm water bath until the desired consistency is achieved. TJO Bees is a husband/wife, beekeeping team managing around 1,000 hives in SW North Dakota. We raise our own queens, harvest our own honey (with seasonal help), and hand bottle each jar of honey.

I got the 5 lb jar of TJO Bees Raw and Unfiltered Honey and it’s been perfect for everything. Tea, toast, baking, or just a spoonful when I need a little boost. The flavor is rich, smooth, and not overly sweet. This is nothing like the overprocessed stuff from big-name brands. The first time I bought it, the honey crystallized and I thought it had gone bad. I ended up throwing it away. Later, I did some research and found out that crystallization is actually a sign of real, raw honey. It happens when the natural sugars start to solidify over time. That means the honey hasn’t been overly processed or diluted. You can just warm it up gently and it goes right back to liquid. It’s so good I ended up turning on Subscribe and Save so I never run out again. Pro: Raw and unfiltered. The real stuff. Smooth texture and deep, clean flavor. 5 pound jar lasts a long time and saves money. Works in everything from tea to cooking to skincare. Con: ????? Final Thoughts: If you want honey that’s natural, unprocessed, and actually good for you, this is it. Crystallization just proves it’s the real deal. I do not like the taste of most honeys. But it is the essential ingredient to any quality tea (just in my opinion). This is the only brand that I've found that is good enough to eat from the spoon! Amazing quality.

  • This is great, raw honey. Excellent, hard-to-beat price.

Unprocessed, thick, golden yellow, consistent month-to-month (I've bought one every four to six weeks; over the last two years), delicious tasting honey. Its never arrived crystalized, but is thick enough that I think if you sat a jar on the shelf too long (6/8 months?), it might. I sometimes get a jar or two ahead of my rate of consumption; so, I've had jars sit on the shelf for a month or two, occasionally. Never a change in consistency, though. I always use it all up looooong before it would have a chance to crystalize. I put a couple of large globs of it in my coffee each morning. Have to scoop it out with a spoon - too thick to easily pour, or use a honey wand with. Highly recommended; no caveats - other than Amazon's consistently miserably inadequate packaging. Inevitably, the box arrives beat all-to-H***, severely damaged (often re-taped together by the shipper, in-route). Every time - w/o exception, for years - the Amazon employee packaging the honey fails to take the dense, 5 lb. nature of the jar into account. This last time, they simply put the jar into a loose-fitting, over-sized, thin, bubble-wrap 'envelope'. As always, the jar bounced around the too-loosely packed box, damaging the box so much that the product was falling out, and the box had to be heavily re-taped closed by UPS. In the past, I've had the honey pkg'd with other items, that were then damaged by the inadequately cushioned jar smashing about within the box. Almost invariably, the pkg has maybe one single large bubble-pack thrown in. Usually, it arrives popped & flat as a pancake (flatter, actually). They do take the time to wrap a doubled-over strip of thin bubble-wrap around the rim of the jar. This helps - somewhat, most of the time. Nonetheless, I've had the thus-wrapped lid arrive severely broken; and, more than once, with honey leaking out. The problem is so consistent that I've decided to include these facts in every single review I do of this honey; which I have set as a recurring purchase every 8 weeks. Hopefully... MAYBE... someone will take notice, pass it up the line, and - MAYBE - someone will actually get the message to the packing department(s), and get the employee(s) to package the honey jars adequately. Or... if that's the problem - get policy changed; if the packaging employees are simply following protocols dictated by Management. ... show more

Update: I've bought this honey 10+ times now. I go through about a jar a month (on average) and I love this honey so much! I have noticed they went up in price by $5 since the very first time I bought a jar...I hope it doesn't keep going up and up like my last brand did. I was initially going to give this honey a low rating after trying it for the very first time. But then I was gifted by my sister another jar of this exact honey and I changed my mind. So, I was loyal to another brand that carries 5 pound jars, but they got way to expensive so I wanted to try another similar honey but cheaper and that's how I found TJO honey. Well my first jar I had bought was not that great at all. It was super crystallized and not smooth at all. It was extremely gritty like eating sugar off a spoon texture and I really hated that although I did finish the bottle because I just used it in my teas so the texture didn't matter much, but I also eat honey off the spoon when I'm sick so that texture was just horrible to eat right off the spoon, or spread it on anything. My sister got me another jar of this honey for my birthday recently, and this jar she got, was amazing. It was nothing like the previous jar I have gotten for myself. This time it was super smooth, not crystallized at all. Texture and flavor was perfect! So guess some batches are 5 star honey and other batches are 2 star honey. I will try this brand again so long as the honey is nice and smooth and not grainy like it was before. ... show more
