used this for america's test kitchen recipe for sesame fried chicken and it worked great. be aware the bag this comes in is thick but difficult to roll up for storage. I used a clip to get it closed and then put it in a separate ziplock to avoid any off flavors seeping into it. it has the consistency of cornstarch so if you spill it gets everywhere but super easy to clean up ... show more

Hard to find locally. I've only just started using it occasionally, in place of corn starch. Use it for thickening gravy, also recently used to dust on chicken wings before baking to make them crispy. Nice!

Unfortunately the bag came open and a chunk of the bag was all over the box which was a bummer. Seems like someone accidently popped it while packaging so it didn't seem tampered with just mishandled. I still used it and made fired tofu with it and let me tell you, you're missing out by not using this for fry batters. It creates the perfect crisp exterior without excess breading. Much stonger as far as thickening than I've used in the past and maybe more than corn starch. I often use tapioca starch as that happened to be more available to me and I like that both tapioca and potato starch give a more gradual, less gluey thickening than corn starch. But this stuff is strong, gotta be careful. Perfect for coating vegetables and didn't notice when I only added half the amount I usually do to baking. ... show more
