Description

The slightly longer curved ergonomic handle provides a comfortable grip and features 7 signature black dots which represent the 7 Samurai codes of honor and moral principles. The beautiful hammered finish applied to the patented Cordova 18 core (Chromium, Molybdenum, Vanadium and Carbon) produces air pockets which help release food while cutting, giving the blade non-stick properties. Legendary industrial designer Komin Yamada brings a new age of innovation to Global cutlery with Sai, unifying function and design, these distinctive Japanese knives combine revolutionary ergonomic handles with triple-layered steel blades that maintain their exceptionally sharp edges. The first new cutlery line produced by Global in more than 25 years, Sai blends the Japanese company's tradition of craftsmanship with modern technological advancements. The knives combine three layers of steel: a core of patented, ultra-hard Cromova 18 Sanso stainless-steel alloy and two outer layers of more flexible 18/8 steel for added strength and resistance to rust. Professional-quality blades are ice-hardened and tempered to increase hardness, resist corrosion and maintain long-lasting sharpness. Its steel surface is molded to fit the hand and dimpled to resist slipping. It also tapers as it reaches the end, reducing its weight for easier dicing and chopping. If you have never owned a global knife you're missing out. A co-worker purchased a dalstrong and this knife is twice as sharp out of the box. It feels good in the hand and is very sharp. The back vertical edge of the knife is a little sharp when using a pinch grip. I wish that was rounded more instead of so square. I've gotten used to it for normal use but may choose a different knife for extended use. I'm happy to find that the grip is not slippery.   • Nicely balanced with good weight
Since I cook with lots of vegetables, it's name got me from the get go. Next, I was lucky to actually test this knife at Williams Sonoma. What immediately impressed me was the balance and the weight of the knife; how it felt in the hand. It may look flimsy in the picture but I assure you, it is not. In addition to the balance and weight, the blade has a curve that lends itself well to chopping and particularly mincing. You can steady the top of the knife with a flat palm while rocking the knife handle up and down quickly for mincing without having the knife leave the cutting board. I can quickly blaze through onions and garlic now, making chopping and mincing a breeze! In fact, I can dice an onion faster with this knife than the time it takes to pull out my mini processor, toss in onion chunks, process into dice, wash the processor and put it away. And did I mention sharp? Wowza. From amateur cook to pro chef, this may very well become your favorite knife. ... show more

I'm not a pro but I like using quality stuff that lasts a long time. I have this knife and the 5-1/2 inch. Honestly, I bought them based on online and Amazon reviews. After several weeks of using them and getting used to them, they are my favorite and the two knives I reach for the most. The size and shape of these two are so versatile. I use them for everything. They are so sharp and hold their edge extremely well. They are light and well balanced. Makes cutting anything easier. I had other knives I loved but the wooden handles dried up and split and the plastic composite handles got sticky, melted, or cracked over time and exposure to heat and oils. The handles on the Global stay clean. They take some getting used to but they don't slip and I have not had any problems with them.   • Good overall kitchen knife
This is a pretty decent Japanese-made knife and is designed pretty well to make it a capable overall knife to cut vegetables with. For its price, I would have preferred something a little better than CrMov18 steel, so since I use it almost daily, it means I have to get it sharpened very few months, which isn't a big deal. It stays razor sharp for about a week or so but it retains a decent edge afterwards. ... show more

This is my all time favorite go to knife! If you don't want to invest a lot of money in a set of knives, but you want one really awesome knife, this is the one. This is the best kitchen knife ever, I really LOVE IT. The size always works for me and the clean up is so easy. I never put it in the dishwasher or the sink, it's very sharp so I simply wash and dry it off after every use, it will stay sharper longer the better you take of it. It is the seamless construction between the handle and forged blade that makes this knife more sanitary. I just purchased this knife for my daughter and I found the best price here on Amazon. To sharpen this knife I use what the website recommends which is the ceramic minosharp sharpener. ... show more
