I use this in my home made mayonnaise and it is perfect. I use 2 parts avocado oil to 1 part olive oil and I never have to think about what is in store bought mayo now. Absolutely recommend this olive oil. I use Chef John's from foodwishes.com recipe. I always double it and it keeps well in the refrigerator. Really wanted to add a light oil (I've fallen in love w pure 100% avacodo oil for most of my cooking) but wanted something lighter. So I was bummed when the heavier oil came (it's heavier compared to my avacodo oil) but it's very good and tastes fantastic! And unlike most Extra Vigin oil it had a much higher burn point. I actually got a bunch of it hot enough to deep fry without smoking/burning! But then that makes me wonder if it is pure EVOO ... Amazon made the mistake right! Thank you Amazon!
