Has a raspberry vinegar taste. Not tart but mild tangy and sweet. I can pour this straight on a salad it's that mild and good. Infact I Have bought raspberry vinaigrette that was very tangy sour and this balsamic vinegar is way better than any salad dressing I have bought. I'm amazed at the quality. Okay, I've had quite a number of balsamic vinegars and after reading all the reviews I felt that this might be the one. Unfortunately, it is quite similar to many other of the "better" balsamics, such as that at Costco and elsewhere. But I would still return to that of Hemispheres. If you haven't tried it yet (listed on Amazon at $40 but my grocery store sells it for $15 so check!), you're in for a treat. Now THAT is a a unique balsamic and deliciously balanced with just the right amount of acidity and sweetness. Poured directly onto tomatoes and mozzarella, you'll be wondering why you kept searching for others. Skip the Due Vittorie and jump to the Hemispheres...you won't regret it. ... show more

Now that I’ve tasted this, I can’t use the cheeper Balsamic vinegars, except for possibly cooking. This vinegar is so mellow and smooth, devoid of the harshness normally experienced with 6% acidity vinegars. Pricey? Somewhat. But considering the supreme quality, you really get what you pay for. This is a thicker than normal balsamic which is the most delicious vinegar I have ever tasted. I hope Amazon keeps it in stock. I tried to reduce a regular thin balsamic vinegar and ruined an expensive pot. Glad I found this item.
