Began purchasing this oil when my perennial favorite, Frantoia, no longer contained only Sicilian olive oil. (Note: it is still being advertised as Sicilian, but read the label carefully!) Collucio, however, is pure, cold pressed Sicilian, often from one olive variety only. Smooth but not overly viscous, with just the right amount of pepper in the after taste. I used to work at a very well known italian restaurant in the BIGcity. This was the brand used to finish off the pastas and other dishes that needed a very tasty olive oil. Its a very clean flavor that can highlight a dish rather than make the whole dish taste like olives.
