This Premium Italian Extra Virgin Olive Oil, made by the Colavita family, has rich aroma and a balanced, full-bodied flavor. The Timeless look of Colavita's signature Extra Virgin Olive Oil was inspired by the containers used by generations of the Colavita family in Molise, Italy to transfer fresh oil from the press to a place of prominence in the family kitchen. During the colder months, olive oil will congeal during shipping. This is normal, natural, and will not disturb the quality of the oil. Please allow congealed oil to rest at room temperature for 24 hours. Product of Italy. Cholesterol and carbohydrate free. Store in a cool dry place.

I like this brand because of the quality of oil, the different flavors and types they offer (I like 100% Italian), and the glass bottle. My previous bottle had started to smell a bit musty, and upon inspection was past its BBD date. So upon opening this bottle the aroma was amazing. From now on I will use this more liberally in cooking and as nutritious flavor enhancer. If it is not pure Italian EVO then they are going to a lot of trouble to fool us. There are certifications all over the label. Don't be fooled by the "usual suspects" on the grocery shelves. Believe it or not, olive oil fraud, by cutting it with vegetable oil and fake labels, is a big business in Italy and Spain. And stay away from plastic containers. No self respecting mfgr would use anything but glass or tin to ship their oil. ... show more

Pale green, with bold aroma and slight peppery taste. I decant the large tin into dark bottles, store in the fridge and use each bottle as needed out of the cupboard. I appreciated that it is certified as to origin and was willing to pay more for that.

I kept the largest glass bottle and replenish it from this can. A little saving tip. I have salads everyday with lemon juice + olives + olive oil. It's a healthy summer routine. Also, I fry anchovies (gutted & boned.) Colavita is the best.

There is a bit of confusion I'd like to clear up from reading some of the other comments. Unfortunately, the western diet has gotten used to poor quality foods. Most people, thinking quality is what ultra-refined light blended olive oil tastes like get confused when exposed to the real thing. This specific brand and product (their Premium Italian) is what the first press olive oil is supposed to taste like. "Peppery" is a bit of a mistranslation. Usually if you say peppery and English speaker means like black pepper or cayenne. In this instance it means like green bell pepper. In other words, it has a strong taste of olives. That is what such an oil is supposed to taste like without having the flavor refined out of it. This is probably the highest quality you can get. You can pay more but I highly doubt you are getting anything for your money other than paying for the hassle to ship the product to the US. The important thing to know is this is certified by the NAOOA. It's checked regularly to make sure it really is extra virgin. Because refined oil is so much cheaper than extra virgin, stealing is rampant in this industry and price is in no way a guarantee its real (quite the opposite). Some people have said this is bitter. That is not even close to being true. What they probably mean is it doesn't taste like 99cent a gallon Equate vegetable oil. And even then, the taste of olive oil is not very strong at all. Mixed with a strong flavor like Colavita's white balsamic vinegar. The two together are better than any salad dressing currently on the market. The white vinegar is alot lighter than most while still having the "grape must" flavor that makes a vinegar balsamic. The two together are absolutely delicious. Stuff you might not care about. The 500ml bottle is top quality and deep dark green heavy glass. This protects the oil from light (which is bad for oils). Same bottle is used for their vinegar btw. This is a bit of a problem because, like a nice tin, cookies might come in, there is a tendency to keep the bottle. Stuff you might not care about but probably should. Distribution. Someone made a comment about harvest date not realizing that this brand is in wide spread distribution in the US. Most grocery chains have this on the shelf (Amazon however is competitively priced). Unlikely to be an old bottle because it is in such high supply and inexpensive for what it is. It does not sit on a shelf long. A "snobbier" oil in limited distribution could actually have this problem, especially delays (years in some cases) between harvest and ship. Amazon is a good test of this. It comes through Amazon Prime. Some other brands (go look for yourself), can take a month or more to get. Reason is they are not a common US food item. Which can and usually does mean it sat on a shelf in China for a year or two and when nobody bought it, it is dropped shipped to the US. Olive oil is not something you can or should have a caveat emptor attitude about. Because problems are so wide spread, you should stick to certified brands with an established distribution channel. ... show more
