  • A treasure trove of delicious recipes
When growing up my mom canned a lot of meats, pork and beef, I want to learn more about the process. This book explains the benefits of canning meat as well as the meats you can, can. There are different methods for canning meat, canning it raw, and hot cooked. This book explains what not to do when pressure canning, like testing your dial gauge, don't over fill your jars or your canner, etc. As you can every year be sure to rotate your jars of meat because meat tastes better the first year. I truly love the recipes in this cookbook, especially the hamburgers in a jar and sausage in a jar. I suggest you give this cookbook a try. ... show more

This book will help you pressure can in a safe way so that you will not be injured and your food will not be spoiled. The first 4 chapters focus on the method, what to do, what not to do, equipment needed, etc. Then we get into the recipes. The major protein types are represented but there is also soups and sauces. There is so much you can do with pressure canning. You can make chicken marsala for later but also tomato sauce. This is a very helpful book. ... show more

The cover seems to be of good paperback quality however the pages do not match the table of contents so finding what you are looking for is not fun. The information inside does not cover canning with weck jars even though a photo of weck jars is on the cover. I just bought 6 cases of weck jars and was hoping that this book would help with the new to me jars. The recipes are good. Personally, I would not recommend this book because of the issues stated above. ... show more
