This is a true olive oil. It does NOT have other cheaper oils mixed in. The way to test an olive oil is to put it in the refrigerator for two days. The portion that does not congeal is not olive oil it is another oil that was added. Many brands claim Extra Virgin olive oil but are actually cut with other oils. California Olive Ranch not only has the taste of a true olive oil, but it congeals in the refrigerator. I keep it there and move small portions to a dark botttle. This keeps the olive oil fresh. Having received another brand of olive oil through Amazon that came to me broken, I was hesitant to give it another go. But with prices of olive oil so high and this being the best oil on the market in my view, I ordered a large bottle. I was delighted how well it was packed, and it came to me as safely as if I had picked it right off the shelf myself. This is a very large dark green bottle. The smell is lucious and the taste is perfect. I'm glad to see Amazon beginning to pack with care again. I was very close to ordering locally, even if they did not have as good a deal. I bought this olive oil to try for baking, and used it to make an olive oil cake and oh wow is it delicious for baking! In a cake like this you really need a great quality oil. It’s a hint grassy, but not bitter or peppery - it’s a delicious mild clean flavor and it enhanced my cake. I’d used a different oil previously and the California Olive Ranch Oil outshined in the baked final result for sure. The picture is of the cake I baked with 3/4 cup of this oil.
