Description

A rendering of food through the memories of family and of home: over ninety plant-based recipes from George Lee, the creator of Chez Jorge, with Laurent Hsia's images of Taiwan. “An astonishingly accomplished exploration of flavors, ingredients, and traditions.”—Katy Hui-wen Hung (洪惠文), co-author of A Culinary History of Taipei: Beyond Pork and Ponlai “This is a beautiful love letter to Taiwan and a quietly uncompromising work of documentation.”—Hannah Che, author of The Vegan Chinese Kitchen George Lee grew up with his A-Gong (grandfather) in the quiet refuge of Tamsui, Taiwan. He took part in the myriad Taiwanese food traditions his A-Gong nurtured, until he was seventeen, when his A-Gong passed. In observation of the death, he and his family undertook a set of Buddhist funeral customs and abstained from eating meat. For a hundred days, they ate at the monastery and the nuns there taught him to cook. Years later, he revisited the lessons and pieced them into the story of his family’s cooking. Some recipes he shares here are directly from childhood: Han-tsî-bê, an everyday breakfast congee floating with fist-size chunks of golden sweet potatoes, and the quintessential preserve Tshài-póo, crunchy strips of sun-dried daikon radish that salt in the air for a few days in January. Others tread the boundaries between old and new, such as Sòo-lóo- pn̄g, a meatless rendition of the hand-cut pork bits his mom braised in soy sauce and ladled over rice. While writing this book, George wandered all over Taiwan with his friend Laurent Hsia, who took photos along the way. Together, they sought out the foods and places tied to their memories growing up. Like the grandpa who slung a bag of apples along the zebra crossing to exit the morning market, or the old couple on the bus in black and white, sitting side by side and peering forward, the two found themselves . . . always afoot, traveling. A-Gong’s Table follows the rhythm of their footsteps: a pulse that takes you quietly through the book and through Taiwan, from morning to night. Read more

  • Excellent and beautifully written
I don’t have the words to describe how amazing this book is already!! I wish I could give it 100 stars. The introduction, the photography and the brief stories/excerpts that accompany each dish have me speechless. I can tell that there was so much love, thought and care put into this book just by the way it is written. I also love that this is a thick paperback and isn’t flimsy at all. I can also tell the pages are also made from high quality material by flipping through them. Highly highly recommend this book for everyone even if you’re not vegan. ... show more

  • Delicious Taiwanese Vegan Recipes
This book, written by a young Taiwanese chef and food blogger (Chez Jorge), recently out of culinary school, joins the pantheon of cookbooks revisiting ancestral foodways. In this instance, A-Gong’s Table includes dishes inspired by Lee’s beloved Taiwanese grandfather. It also includes traditional Buddhist plant-based funeral recipes. What makes it unique is that he adapts his grandfather’s dishes to be meatless in this heart-felt cookbook that mixes old and modern recipes. I appreciated reading Chef Lee’s story and looking at Laurent Hsia’s images of Taiwan that appear throughout. I often felt like I was getting to know his treasured grandfather from reading the recipes and preparing them myself. As an avid vegetarian cook with a ton of Asian pantry staples in my home, I was surprised how many of these ingredients I wasn’t aware of before. If like me, you enjoy experimenting with food products you’ve never had before, you will love this book. (And of course, most ingredients are available online or at your local Asian store.) There are many recipes on fermenting vegetables, warming breakfast dishes and numerous soups. There are also recipes for festivals and traditional holidays. I’m working my way through the soup recipes and have enjoyed everything I’ve made so far. A delicious education for someone like me not familiar with Taiwanese cooking. Please note that Ten Speed Press provided me with a copy of this book but the opinions are my own. ... show more

  • Vegan Taiwanese Recipes
I'll be honest. I'll never cook from this book. Ten Speed Press provided me with a free copy; the opinions are my own. I admire what the author/chef and the photographer, Lawrence Hsia, have created. Lee's stories are engaging, moving, and informative. The photos of both food and street scenes are lovely and enticing. The recipes seem very authentic and use many ingredients with which I was unfamiliar or have not cooked. There are some simple recipes, including preparations for the larder, but many have a long list of ingredients, components, and complicated steps. So, this is just not home cooking for me, but I'm sure there are adventurous cooks who will welcome the challenge. I would certainly eat the food if someone prepared it for me. I'll keep the book for my collection because I have nothing else like it. If you enjoy a story along with recipes, this may be a book for you. ... show more

  • A wonderful collection of vegan Taiwanese recipe & stories
I’ve been a fan of George Lee (@chez.jorge) on IG for a while now, so I was excited to see that he was coming out with a cookbook! As someone with a Taiwanese heritage who prefers not to cook with meat at home, this vegan cookbook was a very welcome addition to my collection. The first recipe I made was the Sesame Noodles (麻將麵) which was so good I’ve made it multiple times already! It’s amazing how flavorful the sauce is even though it’s made entirely from pantry items. Next, I tried Braised “Pork” over Rice which uses Gluten Threads and Gluten Intestine (recipes for both also in the book) as substitutes for the pork. No one is going to mistake the resulting sauce for braised pork, but it was still extremely tasty with all the flavors of the familiar, comforting dish. In addition to the recipes, I love the pictures and stories of Taiwanese life sprinkled throughout the book. Ten Speed Press provided me with a free copy of this book; the opinions are my own. ... show more

  • Authentic and touching
I love seeing more books about Taiwanese cooking and culture! A-Gong’s (grandfather’s) Table provides loving and informative context for each ingredient and recipe. The format of the book is very pleasant and easy to use and well-thought out. The book has a “moody” feel in terms of photography - it’s really beautiful, but I wish there were photos corresponding to all of the recipes. Looking forward to making the tofu pudding tonight! • Beautifully written and delicous vegan Taiwanese recipes
When I used to live in West Coast, there was so many delicious Taiwanese restaurants, but after moving to the East Coast, there’s not that many options where I live. One thing I especially craved was tofu pudding which this book included. It was the first dish to make and it was absolutely delicious and so easy to make. This book gives me so many ideas on how to prepare Asian vegetables and tastes so much better than ordering delivery. Also the mala hot pot recipe is amazing!
