The jury is still out, but after three attempts I’ve decided two things. First, check your muffins at eight minutes. The instructions say ten to twelve, but my first batch was hopelessly burned at ten. Second, it may just be too hot on top. I did Jiffy cornbread muffins last time and stopped at eight.
