I have not read this book yet. I did have the joy of visiting Catherine’s restaurant CHAR very often. She created an incredibly welcoming place full of caring and attentive staff. The coffee was always great, the food delicious. If you can succeed in making a great restaurant is a feat on its on. If you do it while having the best staff ever? Nearly impossible.
