I am a hunter and use the 9" Strong Fillet Knife to break down elk and debone the meat. It is perfect for this task. I have butchered several elk with it. The rubberized grip helps maintain control. The blade stays sharp and the occasional (2-3 times over the course of a big animal) steeling keeps it going strong. Blade shape is great for following the bone and getting every ounce of meat. I absolutely love this knife, we use a lot of casting products, fishing poles mostly but I decided to buy this knife because I have been smoking salmon lately and removing the skin can be a pain in the butt.
