I love this knife. I bought it specifically to carve the turkey on Thanksgiving this year. I deep fry a 20 pound bird and it is all about the carving. I wanted a knife like the ones you see at the buffet. This thing has a great handle that stays grippy in your had even with turkey juice all over the place. The knife cut the bird like it was hot through butter. I did two birds and it stayed sharp and did a great job. With two birds under its belt, I may do a third one this year and then shelve it. Knife is light weight and easy to hold. Handle is soft and padded from the leather like wrap sewn to it. Blade is thin and flexible. Came in straight from the box. Knife seems sharp out of the box. Sheath for the blade is cheap light plastic. The tab the holds the sheath to the blade snapped off when it was first removed from the knife. ... show more

I used it to slice a couple of briskets after smoking them. Overall happy with the purchase, only con and it is a slight one (hence still 5 stars) is I would have liked to see the blade not as flexible as it is. But for the money its all good!

I own a few carving knives and here's what this one rates. The handle is amazing Cover is very protective and easy to slide on and it locks on very safe My only concern was the sharpness.. it wasn't as sharp as some of my other brisket knives. Overall its a great buy
