Description

Chef'sChoice 463 Pronto manual Asian/Santoku sharpener is the fastest manual sharpener on the market. The 463 includes 2 stages, one for sharpening and a second for honing/polishing for a razor-sharp, arch-shaped edge that is strong and durable. 100-percent diamond abrasives are used in both stages 1 and 2, and the diamond abrasive wheels will hold their shape indefinitely (unlike ceramic wheels which lose shape over time). Crisscross sharpening technology creates an extremely sharp edge with lots of bite. Diamond abrasive wheels sharpen simultaneously in and out for a superior burr-free edge. Micron-size diamond abrasives in stage 2 leave your knife with a super-sharp, polished edge. The precise bevel angle control sharpens to an ultra-sharp, Asian-style, 15-degree edge.   • Almost 3 Years of Use and Abuse
I don't know how many years it will take to wear this sharpener out, but after three years of constant use, it's still going strong! I purchased this sharpender after reasearch the America's Test Kitchen choices for kitchen knives and sharpeners. The knives I purchased are 15 degree grinds and this sharpener easily keeps them razor sharp! On knives that are already 15 degrees, I will run them through the number 2 slot for about 54 swipes and then you're done and have a razor sharp knife for a long time. But it doesn't stop there! I have reprofiled and sharpened over a dozen knives on this sharpener! Old and new, from cleavers to boning knives, I have reprofiled and sharpened them all on this little guy. It take more time to do this, but is totally worth it. Here's my process: 1. Grab the knife you want to put a 15 degree edge on and run a sharpie marker down the length of the blade to be sharpened on both sides. 2. Start drawing your knife through the number 1 slot until there is no more sharpie marker on the edge of the blade. This is an indicator that your edge is now reprofiled. Keep in mind, that for some knives and ones in rough shape, you may be running it though the 1 slot a couple hundred times. 3. Once all the sharpie is gone, run it through the number 2 slot at least 50 times. This sharpener is the best value on the market. You will not regret buying this sharpener! ... show more

  • Decent knife sharpener
Depending on the thickness of your knife blade this works as stated. I was expecting the knife edges ti feel sharp which it doesn’t do but the knife is sharp. When you brush your finger over the sharpened edge you expect it to feel sharp. I didn’t get that feeling when I did that. Holding a sheet of paper the sharpened knife cuts it with ease. Not a bad product but I think a sharpening stone and oil will give you a better sharped tool. ... show more

Saw this on ATK. Works like a charm and nothing says ease like a sharp knife. I am able to use my honing steel longer which keeps my knives sharp. Good stuff. Not good for one sided blades tho.

  • So glad I finally bought this!
I have several odd knife sharpeners and a whet stone that I could never figure out how to use properly and they never sharpened my knives very well. The Chefs Choice 463 was recommended by America's Test Kitchen and I trust their product reviews so I bought this sharpener while it was on sale. I'm so very happy that I did! I've had my knives sharpened professionally over the years and was never happy with them after they were sharpened, especially considering how expensive it was. Following the instructions I first sharpened two of my older smaller knives (Henckels) that were very dull. I used the "sawing" motion recommended in the instructions, though did have to pass the knives through the sharpener about 20 times to get the sharpness I wanted (they were REALLY dull!). I was so impressed at how easily and quickly they got sharpened to the the edge I wanted that I then sharpened by 2 big Wustoff knives, and was equally impressed at how easily and quickly they sharpened up. I just sharpened 4 knives to the exact sharpness I wanted at a cost that was less than the professional sharpeners were charging me. And I did it in my own kitchen and it only took a few minutes! I'll never have to send my knives out to be sharpened ever again! I read other people's reviews, positive and negative, and took those into account when making this purchase. I can only report my own experience, which was very satisfactory. FYI, I'm a senior citizen and am not much of a do-it-yourself-er, so if I can figure out how to use this then anyone can. My only recommendations are that, 1) you place a mat or some newspaper or something on the counter next to the sharpener when using so that if you pull the knife all the way out by accident while sharpening you don't nick your countertop, and 2) don't be ham-fisted and press down really hard when sharpening. Believe me, you'll still get a great edge with just a little pressure. Based on some of the negative comments I read I think some people may have put too much pressure on their knives when sharpening. I plan on buying one of these as a Christmas gift for someone and have already recommended it to several cooking buddies. ... show more
