This makes a delicious breakfast! Saute the veggies in a little oil (I used bacon grease), then set aside. Scramble a couple of eggs, then when they are mostly cooked add the veggies and mix together, add the tortilla strips and stir, then top with the cheese and turn to low until the cheese is melted. Makes a quick and easy breakfast! I just saved the salad dressing for another use, but you could certainly add a little of the chipotle dressing if you wanted your scramble to be a little saucy. ... show more

Nothing special for the price point, although I do enjoy the corn chips. Should be around $3.50 for the size. Don't expect to reach this at lunch & mistake it for being enough. You'll need the soup, half sandwich, peace of chicken or 2 tacos.

This is a nice combination of ingredients/ flavors, but why, why do so many of these "all natural" companies insist on adding xantham gum to their dressings? Just tell us to shake the dressing. Xantham gum is known to upset sensitive stomachs and upsets the gut microbiome. It's such an unnecessary additive and signals a lack of real commitment to natural/healthy ingredients. ... show more
