I grew up with both my grandma and mom every year stringing rows of fresh sweet and spicy peppers to have them dry over the summer period, so that they could use them during winter time when fresh peppers were hard to come by. These Aleppo pepper flakes smell like the dry peppers from my childhood. I love to just sniff the package every time I use it during cooking. Not only the smell is fresh and lovely, but the color is also right. These flakes are the fresh, bright red color of properly dried peppers from this year, not ones that have stayed for a few years and have become a darker slightly grayish color. My family doesn't like spicy food too much, but since I got this package, I put a bit in most dishes I cook. Great value; these will not quickly run out. I can also tell they're fresh. This was my first time ordering from this brand and while they're clearly packaged well, I was worried the aleppo pepper would be old. When I opened the package, however, they were shiny with a hint of oiliness, bright red, and fragrant. Tasted mildly spicy with a slight fruity tang. Definitely fresh! I purchased this to use both in a dip called Muhammara (made with pecans) and to add a little kick to baked chicken. It also works mixed with Italian seasonings to kick up beef a notch if other peppers are too strong (e.g. jalapeños). It has a somewhat smoky flavor so also good if you like smoked paprika and can be used in it's place (try it over panko crusted baked Mac & cheese). The seal on the plastic pouch is robust and keeps flavor fresh. I find many resealable pouches to have poor quality seals, requiring decanting the spice to maintain its freshness - not the case here.
