I thought this would be easier/better than cutting in shortening/butter by hand. It is very easy to lose control of the process and end up with a very fine texture. Make sure your fat is very cold and already cubed. I prefer a food processor or a pastry cutter. Can also be quite messy.

I purchased this stainless steel pastry attachment when I was starting my holiday baking and my (grown-up) kids had requested scones for Christmas morning. I have a KitchenAid 5-quart Artisan series mixer that is more that 20 years old and this attachment fitted perfectly. I usually prepare recipes that require cutting in cold butter by hand using a pastry blender, but I got the same results in less time using this attachment - the key is to stay on low speed and not over blend.
