  • Homemade Luncheon Meat
I'm somebody who likes to experiment in the kitchen, who also happens to like fried spam for breakfast here and there. This provided a fun opportunity for both, as well as additional use. I do have some mostly minor issues with it and might have made this a 3.5 star review if possible. The first issue is that the lid lock tabs/flanges at the top aren't rolled so if you're not careful when handling/cleaning they can poke you. The thermometer ended up collecting steam condensation while cooking, that made it hard to read and hasn't quite dried out a couple of days later, and looks like may have discolored the dial some. I might just use my normal probe in the future to avoid that, but the one it comes with is accurate, and makes sure it's reading directly down in the center where it's important. After removing the cooked meat, there was still a thin layer/film that was very stubbornly stuck to the canister walls and the spring plate and hard to clean even after soaking. I might be able to grease or line the canister next time but where the spring is held to the plate will probably need a dishwasher cycle. Overall the quality is decent, and it's easy to use. The bottom is actually not completely flat, which at first I wasn't sure about, but I think it probably helps when cooking, allowing water to circulate better, so is actually thoughtful design. Ultimately it made some pretty good meat and we had it fried with eggs and rice for silog. I sliced out, vac-packed and froze the rest for later use. The other use that I've found for the canister, which I'll probably use it for more often, is that it's a great vessel to use for an immersion blender. I used a recipe from YummyKitchenTV and was happy with the result. I was concerned that it might come out salty but it ended up being just right. I ground the pork, then put it through the food processor with the seasonings and water before packing into the canister and resting it in the fridge for a couple of days. To cook it, I used sous-vide for about 2.5 hours at 185f. I probably could have done it for a little less time but it still came out really good. If you don't have a sous vide setup, boiling in a large pot until the temperature in the middle is appropriate for your meat choice will work. 1 kilo regular ground pork 2 tablespoons sugar 1 tablespoon Himalayan salt 2 tablespoons kosher salt (you could probably use one type of salt) ½ teaspoon white pepper 1 tablespoons cornstarch ½ teaspoon pink salt (curing salt) ½ teaspoon garlic powder ½ teaspoon white onion powder ¼ teaspoon cayenne ½ cup cold water ... show more

  • Great meat press, but needs a new thermometer
Pros: It's well-made and feels solid. With this meat press, I can now prepare my own deli meats, which is incredibly convenient. It was easy to clean and use. I do recommend putting a circle of parchment paper at the bottom before adding your meat, since I had sticking. Cons: There are no instructions included in the packaging, so you'll have to refer back to the listing or watch YouTube videos as I did to figure it out. Also, the thermometer is terrible. It is not in Fahrenheit and Celsius, as stated. Also, it does not work (or needs to be calibrated, but I am not sure how). I overcooked my turkey deli meat because I kept waiting for the hand to move to the suggested temperatures for poultry (which it never did). I expected it to cook in 60-90 minutes on a low simmer, but the hand wouldn't move past 85. I thought maybe the problem was that I needed a larger pot, so I switched to a stock pot, but nothing changed. Overall, I cooked my deli meat for three hours! The arm still never moved, indicating that it was done for poultry. My meat tasted good and wasn't as dry as I feared, but it might have been a lot better if I knew when it was done cooking. This has a tiny learning curve, but it is not difficult to use. The only issue I had was with the thermometer. I will need to purchase another thermometer before I can use this again. ... show more

  • Ham maker, meat press
This ham maker, meat Press is a perfect tool for any homesteader kitchen. I just got a deli slicer machine and so now I can start processing and making my own pressed deli meat. This canister seems to be a good quality and should hold heat and process the meat appropriately. I love that the thermometer is able to be inserted through the core and not interfere with the spring load. The spring seems very sturdy and strong so it should press any meat down and pack perfectly. At the current price of $35.99, this is exactly as described and I recommend it. ... show more

  • High quality stainless steel, but there were no instructions included!
I was very disappointed it didn't include an instruction book and recipes. I have never used one of these before and therefore have no idea how to use it. Full disclosure, I have not actually made anything in this to this point but that is really not necessary to know it is great. I like making terrines and that sort of thing so it will be great. It is well made of a heavy gauge stainless. The lid fits properly and the thermometer access is great. Super good. If you love to cook, get one! ... show more
